Turmeric For Indian Cuisine
Turmeric is a powerful, deep yellow spice that brings colour and flavour to all kinds of dishes. This staple of Asian cooking is aromatic and delicious, and it is no coincidence that it has been used in the kitchens of India and China for thousands of years.
Using Turmeric
Turmeric, which has soared in popularity in recent years, is typically part of curry spice blends and works well in rice and lentil dishes. The earthy flavour of turmeric pairs nicely with courgette, spinach, fish and chicken. Turmeric may taste slightly bitter at first, so it needs to be used correctly. The bitterness disappears when turmeric is simmered gently in oil or butter over low heat for about ten minutes. This also intensifies the flavour of the turmeric.

A simple pasta, an easy risotto, a salad or other everyday dishes are easily made flavourful with spices in particular. The most important thing is balance – as you gain experience in using spices, you start to get a sense of which herb brings out the aromas of which dish and in what proportion the spice is best used.
