The roots of the native Criollo variety reach deep into the lush rainforests of the Peruvian Amazon, where small family communities grow cocoa beans responsibly and sustainably. We work closely with these communities, and cultivation methods are developed by providing training and the framework for the best possible farming. This secures the livelihood of the cocoa farmers, guarantees them fair compensation, and allows their children to attend school.
Family Farmers
Our cocoa beans are grown by small family farmers, with whom our carefully selected sourcing partners work closely. This means the ethical problems typical of mass production, such as the use of child labour, are far more closely controlled.
Certificates
Our partners on the ground are responsible for delivering education, healthcare and other activities that support the farming communities, including schooling for children. The Organic certificate alone guarantees just and fair treatment of nature, animals and people. Our partners also hold the SPP certificate, which secures funds for children’s schooling and makes it possible to monitor the farmers’ operations.
Production
The processing of ripe cocoa beans begins with a fermentation period of 4–5 days, during which the aromas of the cocoa bean develop and its colour changes from purple to a beautiful brown. After fermentation the beans are dried, after which they are ready to be used and further processed into raw cocoa powder. Cocoa powder is a versatile ingredient that can be used in almost any kind of cooking.
