What is ghee

Ghee, or clarified butter, has been an important part of Indian cuisine for centuries. However, since ghee — like coconut oil — is a saturated fat, it shouldn’t be relied on to cover your entire fat intake.

Use in cooking

Because ghee is a more saturated fat and therefore chemically more stable, it is excellent for cooking even at high temperatures. It is thus a great choice for frying and baking instead of traditional cooking fat and butter, and in summer it works well as a spread on picnics thanks to its good keeping qualities.

Flavour

In flavour, clarified butter is roasted and nutty, which makes it an excellent match for Eastern dishes. In many cuisines of the Indian region, ghee is used to bring out the flavours of garlic, turmeric and cumin, for example.

Origin and production

What sets ghee apart from ordinary butter is that the water and the milk protein have been removed. It is therefore an organically produced butter oil, made from the fresh milk of cows that have grazed on organically certified alpine pastures. The cows are free to graze in the Alps, eating alpine herbs and grass.
