Taste and Use
Cacao nibs are crushed cacao beans — a versatile ingredient for baking and snacking. The flavour is strong and bitter, the authentic taste of the cacao bean. Many enjoy cacao nibs on their own or mixed into muesli, granola, overnight oats or a trail mix, but they can also be added to dessert baking and smoothies. You can also make your own raw chocolate from the nibs. On top of all this, they bring delicious flavour to doughs, frostings and decorations, and a dark, full-bodied taste to smoothies.
Origin
The roots of our Criollo cacao beans reach deep into the lush rainforests of the Peruvian Amazon, where small family communities grow cacao beans responsibly and sustainably. We work closely with these communities, and cultivation methods are developed by providing training and the framework for the best possible farming. This secures the cacao farmers’ livelihood, ensures they receive fair compensation, and allows their children to attend school.
Farming and Responsibility
Our cacao beans are grown by small family farmers, with whom our carefully selected sourcing partners work closely. The ethical problems typically associated with mass production, such as the use of child labour, are therefore far more closely controlled.
Certifications
Our partners on the ground are responsible for delivering education, healthcare and other activities that support the farming communities, including schooling for children. The Organic certification alone guarantees the just and fair treatment of nature, animals and people. Our partners also hold the SPP certification, which secures funds for children’s schooling and makes it possible to monitor the farmers’ operations.
Production
The processing of ripe cacao beans begins with a fermentation period of 4–5 days, during which the aromas of the cacao bean develop and its colour changes from violet to a beautiful brown. After fermentation the beans are dried, after which they are ready to be used and further processed.
