Almond flour is a soft, mild-tasting flour made from blanched almonds. It is wonderfully versatile in both baking and cooking. The sweet almonds used in our almond flour are grown in Italy.

How to use
Traditionally, almond flour has been used to make macarons and marzipan. As such, it also works brilliantly as a base for cheesecakes and raw cakes, as well as in melt-in-the-mouth chocolate fondants. Thanks to its mild flavour, almond flour is suitable for both savoury and sweet baking and cooking. With almond flour you can make both raw and baked low-carb pastries, cakes, pancakes, cookies and breads. Because of its properties, almond flour is one of the most popular ingredients in ketogenic baking!
Baking tips
Almond flour can replace almost any flour used in baking and cooking. In a bake made solely from almond flour, the texture may not be as firm, so we recommend using it together with rice flour or buckwheat flour, for example. High in fibre, almond flour absorbs more liquid than usual, so it is a good idea to increase the amount of liquid in the dough or slightly reduce the amount of dry ingredients. Almond flour lacks the gluten structure typical of gluten-containing flours, which is why it does not behave the same way in baking. You can add structure by mixing psyllium fibre into the dough, which also makes the dough easier to work with.
