Green tea is enjoyed especially in Japan and China before and after meals, as well as with food.

Production and picking

Green tea is hand-picked from tea bushes. After picking, the tea leaves are left to wither for about a day, after which the leaves are rolled either by hand or by machine, breaking their cells and releasing the enzymes. Green tea is not fermented like black tea; instead, fermentation is halted by heat treatment. During heat treatment the fermenting agents in the tea leaves, the enzymes or ferments, are destroyed, so the tannic acid in the leaves has not broken down and the alkaloids remain unchanged and undiminished.
