Carnosine
Carnosine is a dipeptide formed from two amino acids, beta-alanine and histidine, and it is produced in the liver. In the diet, it is obtained mainly from meat. Water-soluble carnosine acts in many ways throughout the body, but especially in the muscles. Carnosine is found, among other places, in the heart muscle, brain, skin, liver and kidneys.
